**Blueberry Compote** __Ingredients:__ * 1 lb blueberries (I used frozen) * zest of 1 lemon * 2 tbsp lemon juice (approx the juice from that zested lemon) * 3 tbsp sugar * pinch of kosher salt * 1-2 cinnamon sticks * 1-2 knuckles of fresh ginger, peeled __Directions:__ Add everything to a medium pot and cook over medium heat. (If using fresh blueberries, the recipe says it should take 7-10 minutes - it will take longer with frozen. Honestly, I just left it in the pot over medium-low heat for a while, while I did other things. Maybe 25 min?) Transfer to jars (makes about 1 1/2 cups). It will thicken slightly as it cools.
