**Pan-Roasted Lemon Cauliflower** __Ingredients:__ * 1 head of cauliflower, in large florets (ideally with flat sides) * olive oil * salt * lemon juice * optional: lemon zest, herbs (parsley, marjoram, etc) __Directions:__ Heat olive oil in pan. Place cauliflower in pan in a single layer (ideally flat sides down) and cook, tossing occasionally and browning without scorching. Season with salt. When browned, cover and lower heat. When cauliflower can easily be pierced with a fork, about 10-15 min total, sprinkle lemon juice and herbs and remove from heat.
