**Roasted Spiced Chickpeas** __Ingredients:__ * 30 oz can chickpeas, drained and rinsed * 2 tbsp vegetable oil * 1/2 tsp ground cumin * 1/2 tsp ground coriander * 1/2 tsp ground ginger * 1/2 tsp ground hot paprika (we used regular, but I bet it would be good spicy!) * 1 tsp kosher salt (can reduce, to taste - we sometimes find this to be too much) (makes 2 cups) __Directions:__ Preheat oven to 425 degrees. Toss chickpeas with oil and spices until evenly coated. Spread on a rimmed baking sheet. Roast, shaking pan occasionally, until chickpeas are golden and crunchy, about 30 minutes.
