**Southwest Bowls** //idea from Alison Denton Jones// __Ingredients:__ * rice, leftover or fresh * ground turkey (or other protein) with [[Taco Seasoning]] * 30 oz diced tomatoes, canned * avocados * sour cream * salsa * frozen corn, warmed * 30 oz black beans, canned * cilantro and/or scallions * cheese, shredded * other leftovers (peppers, onions, sweet potato, brussels sprouts, etc) __Directions:__ Make rice if using fresh (we do it in rice cooker - 2c brown rice to 3c liquid). Optional: roast the black beans. Preheat oven to 350F. Drain and rinse beans and put on sheet pan, then roast for 20 minutes. Cook the turkey/protein, adding taco seasoning as it cooks. Put everything on the table and make your own! Adaptable to many ingredients - this is just what we did the first time we tried it.
