===== Tapioca Pudding ===== __Ingredients:__ * 1/2 cup small pearl tapioca (do not use instant tapioca) * 3 cups whole milk (or skim milk with cream added) * * 1/4 teaspoon salt * * 2 large eggs * * 1/2 cup sugar * * 1 teaspoon vanilla extract __Directions:__ Combine tapioca, milk, and salt in a large pot (even though it is a medium pot amount of ingredients) on medium-high heat. Stir while bringing to a bare simmer. Lower the heat and cook, uncovered, at the lowest possible heat, adding sugar gradually until the tapioca pearls have plumped up and thickened. Stir occasionally to prevent sticking. (Depending on the type of tapioca you are using and whether it called for pre-soaking, this could take 5-45 minutes. So far, ours has been on the longer end of this range.) This is the part of the process where the cooking tapioca will bubble over if the pot is too small. Beat eggs in a separate bowl. Temper them, to avoid curdling, by slowly whisking in some of the hot tapioca to equalize their temperatures. Then add the egg mixture to the pot. Increase heat to medium and stir for several minutes until the pudding thickens. Do not let it boil, or it will curdle. Cool for 15 minutes. Stir in vanilla.
