**Turkey Lettuce Wraps** Made for the occasion of a Zen Garden potluck __Ingredients:__ * 1 tbsp oil * 1 large onion * 1.25 lbs ground turkey * 1/2 c peanut sauce (see below) * 1 tbsp hoisin sauce * 1 tbsp soy sauce * 1 cucumber, peeled, seeded, chopped * 2/3 cup chopped mint, divided * something to wrap in (large lettuce leaves, savoy cabbage, tortillas... or skip this and make as a salad) __For non-spicy Peanut Sauce (if not store bought):__ * 1/4 c creamy peanut butter * 1.5 tbsp rice vinegar * 2 tbsp soy sauce * 1 tbsp honey * 1/4 tsp ground ginger * water or coconut milk to desired consistency __Directions:__ Heat peanut oil in heavy large skillet over medium-high heat. Add onion and saute until beginning to brown, about 3 minutes. Add turkey and saute until brown and cooked through, about 7 minutes. Add peanut sauce, hoisin sauce, and 1 tbsp soy sauce; heat through. Stir in cucumber and chopped mint. Season with salt and pepper. Transfer turkey mixture to a medium bowl. Place mint sprigs and lettuce leaves on a platter. To make wraps, spoon mixture onto a leaf, add a few sprigs, fold sides over filling, and roll. Additional soy sauce can be used for dipping. Makes 4 servings.
