Apple Celery Fennel Summer Salad

This is a nice, crisp summery salad that we've made for a few years, and can be a fun alternative when you don't feel like anything especially leafy. For the record, it's from food.com.

Dressing

• 1/4 cup plus 2 tablespoons lemon juice
• 1 tablespoon extra-virgin olive oil
• Coarse grained salt and cracked black pepper
• (optional) 1 tbsp honey

Salad

• 2 large apples, julienned
• 1 medium head fennel, cored and thinly sliced
• 3 large ribs celery, sliced (about 1 cup)
• 1/2 cup cilantro leaves, roughly chopped or more to taste (we have not typically added this)

Directions

In a large bowl, combine lemon juice, olive oil, pepper and salt. Add the salad ingredients and toss. Taste and adjust seasonings. Then enjoy!
