This famous* recipe came to us from Kate's sister Amy, and then became known (for reasons unknown) as “Kate's Banana Bread”.

* perhaps not actually famous

Anyhow we make it a lot.

• 1.5 c flour (any mix of white and whole wheat)
• 0.25 c sugar
• 1.25 tsp baking powder
• 0.5 tsp baking soda
• 1-2 tsp cinnamon
• optional: some amount of millet, until Court thinks it's good
• optional: some Da Lat spice blend and/or nutmeg
• 2 eggs
• 2-3 bananas, mashed
• 0.25 c applesauce, or an extra egg

Preheat to 350 F. Grease loaf pan. Mix dry ingredients. Add egg, bananas, applesauce and mix again. Pour into pan, and bake:

• 50-55 mins in a bread pan
• 20ish mins in a standard muffin tin
• 14ish mins in a mini muffin tin
