teriyaki_salmon

Ingredients:

  • 1 pound salmon
  • 1/2 cup soy sauce
  • 2 tablespoons mirin
  • 2 teaspoons sugar
  • 1 tablespoon vegetable oil (optional)

Procedure:

Trim the salmon and cut the salmon into serving sizes.

Combine rest of ingredients, and marinate the salmon in the fridge for 30-60 minutes.

When the salmon has marinated, heat a heavy duty skillet over high heat. Remove the salmon, pat dry with a towel, and the baste lightly with oil.

Cook the salmon skin-side down for 2-3 minutes, being careful to crisp the skin without burning it. Then, flip and cook 2 minutes more, getting some color and sear on the top.
