First, make mirepoix: dice the onion, carrots and celery. Add a little vegetable oil to a medium-hot pan and cook the mixture until the onion starts to become translucent. Add the ground beef and break up with a spatula, cooking until it browns and cooks through. Add taco seasoning and mix.
Prepare toppings: chop tomatoes and avocados, grate the cheese, heat refried beans, and wash and prepare the greens.
Serve with tortillas, salsa and any other desired toppings.
