Blueberry Compote
Ingredients:
- 1 lb blueberries (I used frozen)
- zest of 1 lemon
- 2 tbsp lemon juice (approx the juice from that zested lemon)
- 3 tbsp sugar
- pinch of kosher salt
- 1-2 cinnamon sticks
- 1-2 knuckles of fresh ginger, peeled
Directions:
Add everything to a medium pot and cook over medium heat. (If using fresh blueberries, the recipe says it should take 7-10 minutes - it will take longer with frozen. Honestly, I just left it in the pot over medium-low heat for a while, while I did other things. Maybe 25 min?)
Transfer to jars (makes about 1 1/2 cups). It will thicken slightly as it cools. If you like, add a cinnamon stick and a knuckle of ginger to each jar before you transfer.
