Cabbage Salad

Ingredients:

salad:

  • red or green cabbage (usually about half a head, depending on size), chopped
  • 2-4 scallions, chopped
  • 1 packet soy-flavored ramen noodles (use noodles for salad, reserve flavor packet)
  • 1-3 carrots, depending on size, chopped
  • 1/2 cup slivered or sliced almonds
  • other leftover crunchy vegetables (radishes, bell pepper, etc)

dressing:

  • 2 tbsp vinegar
  • 1/2 tbsp sugar
  • 1/4 c neutral oil
  • few drops of hot sauce
  • packet flavoring from ramen noodles

Directions: Crunch up the dry ramen noodles until they are in small chunks. Toast them in a pan, and when they start to toast, add the almonds (they will burn faster than the ramen), toasting until they are lightly brown. Leave to cool. Assemble the vegetable parts of the salad in a large bowl. Whisk together dressing. Add ramen/nuts on top of salad, and dress just before serving.
