Roasted Spiced Chickpeas
Ingredients:
- 30 oz can chickpeas, drained and rinsed
- 2 tbsp vegetable oil
- 1/2 tsp ground cumin
- 1/2 tsp ground coriander
- 1/2 tsp ground ginger
- 1/2 tsp ground hot paprika (we used regular, but I bet it would be good spicy!)
- 1 tsp kosher salt (can reduce, to taste - we sometimes find this to be too much)
(makes 2 cups)
Directions:
Preheat oven to 425 degrees. Toss chickpeas with oil and spices until evenly coated. Spread on a rimmed baking sheet. Roast, shaking pan occasionally, until chickpeas are golden and crunchy, about 30 minutes. Let cool completely. Store in an airtight container up to 2 weeks.
