Turkey Lettuce Wraps
Made for the occasion of a Zen Garden potluck
Ingredients:
- 1 tbsp oil
- 1 large onion
- 1.25 lbs ground turkey
- 1/2 c peanut sauce (see below)
- 1 tbsp hoisin sauce
- 1 tbsp soy sauce
- 1 cucumber, peeled, seeded, chopped
- 2/3 cup chopped mint, divided
- something to wrap in (large lettuce leaves, savoy cabbage, tortillas… or skip this and make as a salad)
For non-spicy Peanut Sauce (if not store bought):
- 1/4 c creamy peanut butter
- 1.5 tbsp rice vinegar
- 2 tbsp soy sauce
- 1 tbsp honey
- 1/4 tsp ground ginger
- water or coconut milk to desired consistency
Directions:
Heat peanut oil in heavy large skillet over medium-high heat. Add onion and saute until beginning to brown, about 3 minutes. Add turkey and saute until brown and cooked through, about 7 minutes. Add peanut sauce, hoisin sauce, and 1 tbsp soy sauce; heat through. Stir in cucumber and chopped mint. Season with salt and pepper.
Transfer turkey mixture to a medium bowl. Place mint sprigs and lettuce leaves on a platter. To make wraps, spoon mixture onto a leaf, add a few sprigs, fold sides over filling, and roll. Additional soy sauce can be used for dipping.
Makes 4 servings.
