Waikiki Meatballs

(from the Montgomery family)

Meatballs:

  • 1 1/2 lbs ground beef
  • 2/3 c bread crumbs
  • 1/3 c minced onions
  • 1 egg
  • 1 1/2 tsp salt
  • 1/4 tsp dry ginger or 1/2 tsp minced fresh ginger
  • 1/4 c milk

Sauce:

  • 2 tbsp cornstarch
  • 1/2 c packed brown sugar
  • 1 13 1/2 oz can pineapple chunks
  • 1/3 c vinegar
  • 1 tbsp soy sauce
  • 1/3 c chopped green pepper
  • (optional: broccolini)

In a large bowl, mix meat, crumbs, onion, egg, salt, ginger and milk. Shape into balls. Brown and cook. Remove, keep warm.

Pour fat from skillet. In a small bowl, mix cornstarch and sugar. Make sure you mix in all of the cornstarch lumps. Stir in the vinegar, soy sauce, and the juice of the pineapple chunks, reserving the chunks for later. Mix until smooth.

Cook over medium heat, constantly stirring, until thickened. Boil and stir for 1 minute. The sauce will turn dark brown. Add broccolini, if using. Add meatballs, pineapple chunks and peppers. Heat through, and serve over rice.
