BYO Buddha Bowls with Peanut Sauce

Ingredients:

  • 1 cup farro
  • chicken and/or tofu
  • cornstarch
  • salt
  • 6 tbsp peanut butter
  • 1/4 cup lime juice
  • 2 tbsp soy sauce
  • 1 tbsp brown sugar
  • 1 tbsp sambal oelek
  • 2 cups shredded kale or other dark leafy green
  • 1 1/2 cups shredded cabbage
  • 1 cup bean sprouts
  • 2 carrots, peeled and grated
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup chopped peanuts

*We make this as a build your own, so pretty much everything can be substituted out for something else.

Directions:

To make peanut sauce, whisk together peanut butter, lime juice, soy sauce, and brown sugar. Add 2-4 tbsp of water. Sambal can be whisked in or left on the side.

Cook farro according to package (can be cooked in rice cooker), and set aside.

Season chicken and/or tofu with salt to taste, and coat in cornstarch. Cook in an oiled pan on the stovetop, allowing the sides to brown. Or cook them any other way. Set aside.

Prep all other ingredients you are using. Put the farro, toppings, sauce, and protein in serving bowls, and enjoy!
