Pan-Roasted Lemon Cauliflower
Ingredients:
- 1 head of cauliflower, in large florets (ideally with flat sides)
- olive oil
- salt
- lemon juice
- optional: lemon zest, herbs (parsley, marjoram, etc)
Directions:
Heat olive oil in pan. Place cauliflower in pan in a single layer (ideally flat sides down) and cook, tossing occasionally and browning without scorching. Season with salt. When browned, cover and lower heat. When cauliflower can easily be pierced with a fork, about 10-15 min total, sprinkle lemon juice and herbs and remove from heat.
