Pickled Beets (Refrigerated)
Ingredients:
- 4 medium beets
- 1 cup vinegar
- 1/2 cup sugar
- 1.5 tsp whole cloves
- 1.5 tsp whole allspice
- 1/2 tsp salt
Directions:
Clean, trim, and peel beets. Put in pot and add enough water to cover them, then bring to a boil. Simmer, covered, until tender. (If you slice first, this might be 15 minutes. If you simmer whole and slice afterwards, this might be 25-30 minutes.) Once beets are tender and sliced, add to a bowl (if serving right away) or a jar (if you plan to keep them). It should feel approximately a quart jar, but will depend on the size of the beets. If it is more than a quart, you may need more brine.
In a small saucepan, combine all other ingredients. Bring to a boil and simmer for a few minutes, then pour over the beets. Refrigerate when cool enough. Let marinate for at least one hour before serving. Can keep in fridge up to three months.
