Southwest Bowls

Ingredients:
- rice, leftover or fresh
- ground turkey (or other protein) with Taco Seasoning
- 30 oz diced tomatoes, canned
- avocados
- sour cream
- salsa
- frozen corn, warmed
- 30 oz black beans, canned
- cilantro and/or scallions
- cheese, shredded
- other leftovers (peppers, onions, sweet potato, brussels sprouts, etc)
Directions:
Make rice if using fresh (we do it in rice cooker - 2c brown rice to 3c liquid).
Optional: roast the black beans. Preheat oven to 350F. Drain and rinse beans and put on sheet pan, then roast for 20 minutes.
Cook the turkey/protein, adding taco seasoning as it cooks.
Put everything on the table and make your own! Adaptable to many ingredients - this is just what we did the first time we tried it.
