Southwest Bowls
idea from Alison Denton Jones
Ingredients:
rice, leftover or fresh ground turkey (or other protein) with Taco Seasoning 30 oz diced tomatoes, canned avocados sour cream salsa frozen corn, warmed 30 oz black beans, canned cilantro and/or scallions cheese, shredded other leftovers (peppers, onions, sweet potato, brussels sprouts, etc)
Directions:
Optional: roast the black beans. Preheat oven to 350F. Drain and rinse beans and put on sheet pan, then roast for 20 minutes.
Cook the turkey/protein, adding taco seasoning as it cooks.
Put everything on the table and make your own! Adaptable to many ingredients - this is just what we did the first time we tried it.
