Vegetarian Nachos
Ingredients:
- 2 bags tortilla chips, especially Hint of Lime
- cheese, grated (cheddar, monterey jack, or a blend)
- 1-2 cans of refried beans
- pico de gallo, or some combination of salsa, tomato, onion
- chunky roastable vegetables, such as broccoli, bell peppers
- hot peppers (perhaps on the side)
- guacamole and/or avocado
- sour cream
- cilantro
Directions:
Preheat oven to 425F and use cooking spray on two sheet pans.
Spread chips on the pans, and most ingredients (except for sour cream, avocado, cilantro, and anything else you want uncooked) on the pans.
Bake 8-12 minutes, or until the cheese is bubbly, then add reserved toppings.
