Whole Wheat Banana Walnut Muffins
Ingredients:
- 2 cups whole wheat flour
- 1/2 cup whole rolled oats
- 1 tsp cinnamon
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 2-3 large bananas, mashed (~300g)
- 2 large eggs
- 1/3 cup melted butter
- 1/3 cup maple syrup
- 1/3 cup milk
- 1 tsp vanilla
- 1 cup chopped nuts (walnuts or other)
- optional: oats or millet for topping
Directions:
Preheat oven to 425F for full sized muffins or 350F for mini muffins. Prep/grease a muffin tin.
Mix flour, oats, cinnamon, baking soda, baking powder, and salt.
Separately, mash the bananas, and mix in eggs, oil, maple syrup, milk, and vanilla.
Combine wet and dry ingredients, then fold in nuts. Stir just until combined.
Spoon into muffin tin, and top with oats or millet if desired. For full-sized muffins, bake 5 minutes at 425F, then reduce temperature to 350F, and bake for 15 more minutes. (For mini muffins, bake at 350F 11-13 minutes.)
