Energy Bars
Ingredients:
- 2 large eggs
- ¼ cup (65g) maple syrup
- ½ tsp coarse kosher or sea salt, plus more for sprinkling
- ¼ cup (32g) whole wheat flour
- ½ tsp ground cinnamon
- 1½ cups (138g) coarsely chopped walnuts, pecans, pistachios or a combination
- 1½ cups (245g) coarsely chopped dates, dried apricots, dried cranberries or a combination
Directions:
Heat oven to 350 degrees. Using cooking spray, grease an 8-inch square metal baking pan. Line the bottom and sides with parchment paper. Or, use a cookie sheet with a silicone mat and plan to hand-mold the square into the right size. (Also possible - I used the mini loaf pan and cooked for 20 min, but they were a little hard to remove, and did not quite fit all the batter.)
In a large bowl, whisk the eggs, syrup and salt until smooth. Add the flour and cinnamon and whisk until smooth. Add the nuts and dried fruit and mix until evenly coated, then spread in an even layer in the pan.
Bake until set and golden brown, about 30 minutes. When you press the top, it should feel firm. Immediately sprinkle lightly with salt.
Cool completely in the pan on a rack. If cooked in one square, cut in half, then cut each half into 5 bars. The bars can be kept in an airtight container for up to a week at room temperature or up to a month in the freezer.
